Rubios(R) Bold, Distinctive Flavors of Baja are Now Complemented by New
Interior Design Showcased in Recently Opened Phoenix Location

Inc. (Nasdaq: RUBO) -- Phoenicians who crave the flavor of Baja-inspired food
and the experience of dining in the relaxed yet festive atmosphere of coastal
Mexico can now visit a brand-new Rubios Fresh Mexican Grill(R) for a similar
experience. The restaurant in the Legacy Village Shopping Center, which
opened December 24th, offers Rubios(R) World Famous Original Fish Tacos(SM)
and Mexican seafood, slow roasted carnitas (pork), chargrilled chicken and
carne asada steak served in warm tortillas.
"When Ralph Rubio started 23 years ago with one small restaurant in the
Mission Bay area of San Diego, people would travel from all corners of the
county to savor one of our Original Fish Tacos," said Larry Rusinko, vice

phenomenon and started a huge new trend in all segments of Mexican
restaurants. We now have 18 locations in Phoenix alone where our guests can
experience what we believe is the best-tasting, best-priced Baja-inspired

The new restaurant highlights a new look and feel introduced by Rubios in
2005. Standout features include hand-painted corrugated aluminum walls,
indoor thatched palapas overhead, tile-topped tables, colorful banquette
seating, and custom light fixtures reminiscent of Mexican folk art. These
features are in addition to the signature live fish tanks and open kitchens
which have become hallmarks of Rubios restaurants. The new design enhances
the overall guest experience, creates an atmosphere that is uniquely Rubios,
and provides an ideal platform for the fresh, Baja-inspired cuisine for which
Rubios is known.
The new 2,500 square foot restaurant is located in the Legacy Village
Shopping Center at 2320 E. Baseline Road at 24th. To find the restaurant,
guests need only look for Rubios signature thatched-roof palapas in its
outdoor dining patio.
The new restaurant offers a full menu of Rubios favorites including what
Rubios is best known for -- World Famous Original Fish Tacos. Mexican
seafood lovers can enjoy other signature seafood items too, including
Langostino lobster burritos, shrimp burritos and grilled Mahi-Mahi tacos and
burritos.
In the spirit of how its done in Baja, Street Tacos(TM) filled with all
white-meat chicken, flavorful, tender carnitas or lean carne asada steak are
served, topped with guacamole made from real California avocados, and Rubios
special mix of cilantro and onion. A variety of salsas and sauces made from
scratch daily is available at the salsa bar. Traditional tacos and burritos,
fresh salads and bowls, quesadillas, and HealthMex(R) items (lower in calories
and fat) can be found as well. As in most Rubios locations, the 24th &
Baseline restaurant serves domestic and imported beer.
Rubios started in 1983 by opening its first restaurant -- a fish taco
stand -- in Mission Bay in San Diego. The new location brings the number of
restaurants in total to 154 throughout California, Arizona, Nevada, Utah and
Colorado.
